Please send a good pail over or bucket or both 1 (we have one at the kitchen of the older sort) to Miss Katherine B Davis 80 Willoughby Street Brooklyn N.Y. Miss Davis is to personate a workingman's wife who has four children to care for & whose husband earns about 450 a year.

She wishes to experiment 2 in hours out of school these next two months & she wishes to use the things which such a woman could have. This can be put on my account if you like.

Very truly Ellen H. Richards

The pail or bucket referenced here is what meals in the New England Kitchen were sent home in. The New England Kitchen was not a restaurant and customers were meant to take the nutritious food home with them in a reusable pail or bucket.
